Foreclosure minutes?

I don’t know if this is a stupid question but I’m confused. While searching thru LIS Pendens minutes I have come across many filings for “affidavit of personal service,” affidavit of service w/ non military," affidavit of substitute service," etc. Can anyone shed some light on these? Obvisouly its some way to stall the foreclosure process but what does it mean?

I have never seen these actually recorded. It makes sense though. Whenever the officer of the court serves a summons to a party of a lawsuit they have to document the fact that they did serve the legal papers to the person. Military personnel get special treatment.
