If I put a house under Option To Purchase Contract, say for 60 days, would I get the key to the house on the day the agreement is signed?

In Texas an Option period is a time to get inspections, insurance, and financing arranged, with the buyer’s option to end contract for any reason without penalty. This is not an ownership of any kind, so you do not have unrestricted access to the property.
If it’s legal in your state, you can put a clause in the option that allows you access to the property for showing.
